Sweet Caramelized Asian Pork

I love Asian dishes. And with the quarantine, my favorite Chinese restaurant is closed! Even for take-out! This satisfied my cravings.

Warning: It smells bad during cooking! This recipe calls for a fish sauce, which is widely used in East Asian and Southeast Asian cuisine. But the fish sauce is a key ingredient in this caramelized sticky pork dish, so don't let that deter you!

INGREDIENTS:

  • 2 lb pork butt or boneless ribs
  • 1/2 onion
  • 3 tbsp brown sugar
  • 2 cups water
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tspn olive oil

INSTRUCTIONS: 

  1. Chop the onion and cut pork in small pieces. Heat olive oil in a large skillet and cook onions and pork for about 5 minutes until the meat is well browned.
  2. To the same skillet add water, soy sauce, sugar and fish sauce, bring to a light boil and simmer for the next 30 minutes (or until almost all the water will become a thick, brown caramel like sauce).

Serve over cooked rice and garnish with sliced green onions, if desired. Add crunchy sauteed veggies on the side.
