Strawberry Chocolate Chip Pancakes

It's strawberry season, and one of our favorite things to do with strawberries is make strawberry pancakes! We're also chocoholics, so we decided to add mini chocolate chips to these bad boys, too. They are so delicious and one of my kids' favorite breakfast-for-dinner treats! You could also drizzle a little chocolate ganache over the top to give it that little extra something special. This is really more dessert than dinner, but that's okay every once in awhile!

INGREDIENTS:
  • 1 package fresh strawberries
  • 2 Tbsp sugar
  • 3 cups Bisquick or other baking mix
  • 3 large eggs
  • 1 Tbsp vanilla extract
  • 1 1/2 cups milk 
  • 1 cup mini chocolate chips
  • Cool Whip or whipped cream of choice
  • Chocolate Ganache (optional)
INSTRUCTIONS:
  1. Chop up strawberries and place in a small bowl, add sugar. Mash together and set aside.
  2. Preheat griddle on medium heat.
  3. Mix Bisquick, eggs, vanilla, approximately 1 cup of milk, and half the strawberries until well combined; continue to add milk until you reach desired consistency. Add chocolate chips.
  4. Cook up pancakes, keep warm on a sheet tray in the oven set at lowest temp.
  5. To serve, layer 2 or 3 pancakes, strawberries, and whipped topping. Enjoy!
