Steak Salad with Balsamic Dressing

We try to serve salad for dinner at least 2-3 times a month. My 14 year old tolerates it, my 11 year old loves it, and my 4 year old picks at it. But they do agree that they like steak better than chicken on their salads. This is a simple recipe that's easy to throw together.

INGREDIENTS:
For the Steak Salad
  • Your favorite cut of steak, cooked medium rare or medium and thinly sliced
  • Salad greens of choice
  • Tomatoes, sliced or diced
  • Purple onion, sliced or diced
  • Gorgonzola cheese
For the Balsamic Dressing
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 1 teaspoon garlic minced, about 1 clove
  • 2 teaspoons honey
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
INSTRUCTIONS:
For the Balsamic Dressing
  1. Combine all ingredients in a mason jar. Shake well to combine.
For the Steak Salad
  1. To cook the steak, use a cast iron skillet. Salt and pepper the steak to taste. Heat the skillet to medium-high, drizzle in a little olive oil, and sear each side of the steak. Then, flip the steak every 1-2 minutes until it reaches your preferred temp. Flipping often keeps the steak from getting overdone too fast.
  2. Let the steak rest for at least 5-10 minutes, then thinly slice.
  3. Layer the sliced steak, tomatoes, and onions over the salad greens.
  4. Crumble the cheese over the top.
  5. Top with half of the salad dressing, serve the rest on the side.
