Rich, Creamy Lasagna

I used to be afraid of making homemade lasagna. Turns out, it's really easy. Especially when you use oven-ready lasagna noodles. The cream cheese and sour cream in this recipe makes it extra creamy and delicious.

It's an easy make-ahead recipe for a crowd, or a "cook once eat twice" meal when you double it and make two and freeze one for later (which is what I always do).

Serve with a caesar salad and garlic toast. Yum! Enjoy!

INGREDIENTS:
  • 1 box oven ready lasagna noodles
  • 1 lb Italian sausage or ground beef (substitute ground turkey or turkey sausage)
  • 1 (24-oz) jar spaghetti sauce
  • 1 (8-oz) can tomato sauce
  • 1 tsp Italian seasoning
  • 1 (15-oz) container ricotta cheese
  • 4 oz cream cheese, softened
  • 1/4 cup sour cream
  • 1 egg, beaten
  • 1/2 Tbsp dried parsley
  • 1 lb shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese
INSTRUCTIONS:
  1. Preheat oven to 375ºF.
  2. Brown sausage in a skillet over medium heat; drain. Stir in spaghetti sauce, tomato sauce, and Italian seasoning. Simmer over low heat for 5 to 10 minutes, until the sauce starts to thicken. Remove from heat and set aside.
  3. In a bowl, combine ricotta cheese, cream cheese, sour cream, egg, parsley, and 2/3 of the shredded mozzarella cheese. Set aside.
  4. Lightly spray a 9×13-inch pan with cooking spray. Spread 1 cup meat sauce in the bottom of the pan. Top with approximately 6 lasagna noodles, lengthwise and overlapping to cover.
  5. Top noodles with half of the ricotta cheese mixture. Spoon 1/2 of meat sauce over cheese; sprinkle with 1/4 cup parmesan.
  6. Repeat layering; starting with 6 lasagna noodles, the rest of the ricotta cheese mixture, and ending with remaining meat sauce and parmesan cheese. Top with remaining 1/3 of shredded mozzarella cheese. Cover with foil.
  7. Bake lasagna covered for 25 minutes. Remove foil and bake uncovered an additional 30 minutes, until bubbly. Let stand 15 minutes before serving.
You can easily prepare lasagna ahead of time and refrigerate until ready to bake; you may need to add a few minutes to the baking time. If frozen, thaw completely before baking (follow baking instructions above).
