Chicken Waldorf Salad

Delicious as a traditional Waldorf Salad, you can also make it into a wrap for a quick, heart-healthy meal on the go! Just layer a whole-grain tortilla with lettuce and chicken salad, then roll it up and enjoy!

INGREDIENTS:
  • 1 cup nonfat or lowfat plain Greek yogurt
  • 1 Tbsp Dijon mustard
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp honey
  • 1/2 tsp Kosher salt
  • 1/4 tsp pepper 
  • 4 cups cooked, shredded chicken
  • 3 stalks celery, chopped
  • 1 large crisp red apple, cored and chopped
  • 1 1/2 cups seedless purple grapes, halved
  • 6 cups torn lettuce of choice
  • 1/2 cups walnuts, halved and toasted
INSTRUCTIONS:
  1. In a large bowl, whisk together yogurt, mustard, vinegar, honey, salt, and pepper.
  2. Add chicken and toss to coat.
  3. Fold in celery, apple, and grapes.
  4. Serve on lettuce and sprinkle with walnuts.
