Piggy Mac-N-Cheese

Homemade mac-n-cheese and pulled pork BBQ - a match made in Heaven! I promise this will become your new favorite comfort food. This recipe is simple and delicious.

INGREDIENTS:
  • 16 oz elbow macaroni
  • 2 cups milk
  • 1 egg
  • 2 1/2 cups shredded cheese of choice, more to top casserole
  • 4 oz cream cheese (softened)
  • Black pepper to taste
  • 1/2 lb pulled pork BBQ from your favorite restaurant
  • French fried onions
  • BBQ sauce
INSTRUCTIONS:
  • Boil elbow macaroni until al dente.
  • In a large bowl, whisk together milk and egg.
  • To milk/egg mixture, add shredded cheese and cream cheese and stir well. Sprinkle in a little black pepper.
  • Add al dente pasta to bowl and stir.
  • Pour in a greased 9x13 pan or large cast iron skillet, and top with more shredded cheese.
  • Bake at 350* for 30 minutes, and then turn to broiler for a few minutes to get the top good and bubbly.
  • Remove from oven, top with warm pulled pork and french fried onions, and put back under the broiler for a couple more minutes until french fried onions are crispy.
  • Remove from oven, drizzle with BBQ sauce, and serve.
This is a great use for left-over pulled pork from the other night's take out.
