Lemon Iced Box Pie

Lemon Iced Box Pie was one of my dad's favorite desserts. The "old school" way of making this pie doesn't include baking, just refrigeration (thus the name, "iced box") - but since there are egg yolks in it, I prefer to bake it (my mom never did and we all survived on the raw egg yolks, but still). This is a bright and vibrant spring/summer dessert and is perfect for a holiday BBQ!

INGREDIENTS:
  • 6 egg yolks
  • 2 cans sweetened condensed milk
  • zest from 2 lemons
  • 2/3 cup lemon juice (approx 4-5 lemons)
  • large graham cracker crust
  • Optional whipped topping for serving
INSTRUCTIONS:
  1. Preheat oven to 325* F.
  2. Zest 2 lemons into a bowl.
  3. Squeeze juice from lemons and add to bowl with zest.
  4. Add egg yolks and sweetened condensed milk, stir to combine.
  5. Pour into store-bought graham cracker crust (you can make your own, but I'm all about easy).
  6. Bake at 325* F for 25 minutes.
  7. Cool on the counter until room temp.
  8. Move to the refrigerator; best served cold.

Serve with your favorite whipped topping.

For a smaller pie, you can cut the recipe in half (but still use zest from 2 lemons).
