Honey Garlic Slow Cooker Chicken Thighs (crockpot)

I love a good, easy, crockpot meal. This one doesn't disappoint! My whole family enjoyed this meal - even the picky littles!

Chicken thighs tend to be very fatty (that's what makes them so flavorful and tender). Don't worry about trying to remove all the fat before cooking; I swear, it all melted off while it cooked. That is also why I recommend straining the liquid before making the sauce.

INGREDIENTS:

  • 1 1/2 lb boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/4 cup ketchup
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 1 tsp dried basil
  • 1/4 tsp crushed red pepper
  • 1 Tbls cornstarch
INSTRUCTIONS:
  1. Arrange chicken thighs in a 4-quart slow cooker.
  2. Whisk together soy sauce, ketchup, honey, garlic, basil, and red pepper in a bowl and pour over chicken.
  3. Cook on low until chicken is very tender, about 4 hours.
  4. To make a sauce, strain the liquid from the crockpot into a saucepan and set to medium heat. Add about a 1/4 cup of liquid to a small bowl and add cornstarch, mix well, and pour back into the saucepan. Cook about 5 minutes, whisking, until thickened.
Serve over hot rice.
