Easy Shredded Cola Ham (crockpot)

For whatever reason, I tend to only cook hams at Christmas and Easter. However, Aldi recently had hams on sale for 75% off and I scored an 11 pound shank portion ham for $4.35. So, that's what we've having for Mother's Day dinner! I whipped up this juicy, tender, delicious shredded ham that requires very little work to throw together, which I appreciate on my so-called day off (haha).

INGREDIENTS:
  • 1 cured ham
  • 1 2-liter of Coca Cola
  • 1/4 cup yellow mustard
  • 1 cup brown sugar
INSTRUCTIONS:
  1. If ham is too large to fit in a crockpot, chop it up in large chunks.
  2. Poke large holes throughout ham to allow the flavors to soak in. Place in crockpot.
  3. Mix the mustard and brown sugar in a separate bowl, pour over ham, and rub it in to each piece.
  4. Pour cola into crockpot, filling it about halfway (about half of the 2-liter).
  5. Cook on low for around 5-8 hours, depending on the size of your ham pieces.
  6. Once it has cooked for awhile, you can shred it. Leave it in the cola to continue to soak in the flavors.
  7. When you shred the ham, it should fall apart easily. If it doesn't, let it cook longer before pulling apart.
  8. If the cola starts to reduce too much, you can add more to the crockpot. You probably won't need the entire 2-liter.
There will be a ton of left overs. Enjoy!
