Easy Cheesy Beef Enchiladas

Like lasagna, I was a little intimidated to make enchiladas. I always had it in my mind that it was complicated, messy, and time consuming. But, I was wrong. And this is one of my family's favorite meals now! I will tell you, I believe 100% that the secret is in the sauce - if you can find the A la Orden brand of red enchilada sauce, you will never use another brand.

INGREDIENTS:
  • 1 1/2 lbs ground beef
  • 2 cans A la Orden red enchilada sauce
  • 1-2 cups cheddar cheese
  • 1-2 cups monterey jack cheese
  • 10 10" flour tortillas
INSTRUCTIONS:
  1. Preheat oven to 350* F.
  2. Brown ground beef, drain, put in a medium sized bowl.
  3. Add cheddar cheese (as much as you like!) and enough enchilada sauce to make everything wet (almost 1 can). Stir to combine thoroughly.
  4. Cover the bottom of a 9x13 pan with enough enchilada sauce to coat.
  5. Place a scoop of meat/cheese mixture in a tortilla, roll up, and place in pan. Repeat until you've used all the tortillas and meat/cheese.
  6. Pour the remaining enchilada sauce over the top of the tortillas, covering everything.
  7. Top with monterey jack cheese (again, as much as you like!).
  8. Bake for 25-30 minutes, until hot and bubbly.
  9. Optional - turn on the broiler for a couple of minutes to get the cheese extra bubbly!
These are super easy and very versatile - you can add whatever you like to change it up! Different cheeses, refried beans, veggies, etc. Have fun and be creative!
